Ingredients
1 bag Robust Tortilla Soup
3 1/2 cups water
1 (15.5 ounce) can black beans drained and rinsed
1 cup corn 1 (4 ounce) can diced green chilies
1/2 pound plum tomatoes diced
1 (8 ounce) can no salt added tomato sauce
Directions
- Combine the Robust Tortilla Soup mix with water in a large saucepan. Bring the mixture to a boil before lowering the heat to a simmer.
- Add beans, corn, green chilies, tomatoes, and tomato sauce to the simmering saucepan. Cover and continue cooking for 30 minutes.
- Serve topped with avocado and cilantro if desired.
